Moroccan Spiced Chickpea Soup

Ingredients (serves 4):

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground coriander
  • 1 can (15 ounces) diced tomatoes
  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 4 cups vegetable broth
  • 2 carrots, chopped
  • 1 cup chopped kale or spinach
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions:

  • Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add onion and garlic, and cook until the onion is translucent and soft.
  • Add Spices: Stir in cumin, cinnamon, and coriander, and cook for another minute until the mixture becomes fragrant.
  • Simmer Soup: Pour in the diced tomatoes (with their juice) and chickpeas. Add vegetable broth and chopped carrots. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the carrots are tender.
  • Add Greens: Stir in the kale or spinach, and continue to simmer the soup until the greens have wilted and softened, about 3-5 minutes.
  • Season and Serve: Finish the soup by stirring in the lemon juice. Season with salt and pepper to taste. Give everything a good stir and adjust the seasoning as needed. Serve the soup hot, accompanied by crusty bread or a side of your choice.
