We challenged Ollie to come with an easy, simple vegetarian recipe that we could make after a busy weekday. It responded with this delicious vegetable stir fry with peanut sauce. It’s fast and full of flavor. Give it a try!

Vegetable Stir Fry with Peanut Sauce and Rice Noodles

Ingredients (serves 4):

  • 8 ounces rice noodles
  • 4 cups mixed vegetables (bell peppers, broccoli, snap peas)
  • 4 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 2 teaspoons chili sauce or sriracha
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • Water (to thin sauce)
  • 2 tablespoons vegetable oil
  • Optional: chopped peanuts, cilantro for garnish

Instructions:

  1. Prepare rice noodles according to package instructions; set aside.
  2. In a small bowl, whisk together peanut butter, soy sauce, chili sauce, lime juice, garlic, and a bit of water to achieve desired sauce consistency.
  3. Heat vegetable oil in a pan over medium-high heat. Stir-fry mixed vegetables until just tender.
  4. Add the cooked noodles to the pan with the vegetables. Pour the peanut sauce over and toss to combine.
  5. Serve hot, garnished with chopped peanuts and cilantro if desired.
