Ingredients  

  • 1 lb 450 g large shrimp, peeled and deveined
  • 4 large carrots thinly sliced into rounds
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley chopped
  • Lemon wedges for serving

Instructions 

Prepare the Carrots:

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add the sliced carrots, season with a pinch of salt and pepper, and cook for about 5-7 minutes until they start to soften but still have a slight crunch.

Cook the Shrimp:

  • Push the carrots to one side of the skillet and add the remaining olive oil and butter to the other side.
  • Once the butter is melted, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Add the shrimp to the skillet, sprinkle with paprika, salt, and pepper, and cook for 2-3 minutes on each side until the shrimp are pink and opaque.

Combine and Serve:

  • Mix the shrimp and carrots together in the skillet, ensuring they are well coated with the garlic butter sauce.
  • Remove from heat and sprinkle with chopped parsley.
  • Serve immediately with lemon wedges on the side.
