Ingredients  

  • 2 pounds boneless skinless chicken breasts
  • 2 tablespoons chipotle chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 4 tablespoons olive oil
  • 2 15 oz cans black beans, rinsed and drained
  • 2 cups cooked brown rice
  • 2 avocados sliced
  • 1/2 cup fresh cilantro chopped
  • 2 limes cut into wedges

Instructions 

Prepare the Chicken:

  • In a bowl, mix the chipotle chili powder, ground cumin, smoked paprika, garlic powder, and salt. Rub the seasoning mixture onto the chicken breasts.

Cook the Chicken:

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked. Remove from the skillet and let rest for a few minutes before slicing.

Prepare the Black Beans:

  • In the same skillet, add the remaining 2 tablespoons of olive oil and the black beans. Cook for 2-3 minutes until heated through.

Assemble the Bowls:

  • Divide the cooked brown rice among four bowls. Top each with sliced chicken, black beans, avocado slices, and chopped cilantro.
  • Garnish each bowl with a lime wedge and serve immediately.
