Tired of Taco Tuesday? Try this recipe

I Asked AI for An Alternative Taco Tuesday Recipe

Is it Taco Tuesday in your house? Because every Tuesday is taco Tuesday, right?  That kind of repetition can get boring, at best. This week, we asked Ollie for something that felt like Taco Tuesday but was still fresh and new. Ollie responds with this Taco Tuesday recipe that hits all the right notes: Chipotle Chicken and Black Bean Bowls.

The best part? We can segment the bowls for every eater in our house. Those who like just rice? Done. Those who like no beans? Done. Those who want it all? Yes, please!

We hope you enjoy this recipe as much as we do. If you’d like to mix up your dinner routine without all the work of searching for new recipes, check out Ollie

  • 2 pounds boneless skinless chicken breasts
  • 2 tablespoons chipotle chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 4 tablespoons olive oil
  • 2 15 oz cans black beans, rinsed and drained
  • 2 cups cooked brown rice
  • 2 avocados sliced
  • 1/2 cup fresh cilantro chopped
  • 2 limes cut into wedges

Prepare the Chicken:

  • In a bowl, mix the chipotle chili powder, ground cumin, smoked paprika, garlic powder, and salt. Rub the seasoning mixture onto the chicken breasts.

Cook the Chicken:

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked. Remove from the skillet and let rest for a few minutes before slicing.

Prepare the Black Beans:

  • In the same skillet, add the remaining 2 tablespoons of olive oil and the black beans. Cook for 2-3 minutes until heated through.

Assemble the Bowls:

  • Divide the cooked brown rice among four bowls. Top each with sliced chicken, black beans, avocado slices, and chopped cilantro.
  • Garnish each bowl with a lime wedge and serve immediately.
